Ingredients

  • Kimchi200g
  • Cooked Rice2 cups
  • Eggs2 large
  • Green Onions2 stalks
  • Sesame Oil1 tablespoon
  • Soy Sauce1 tablespoon
  • Vegetable Oil2 tablespoons
  • Garlic2 cloves
  • Carrots1 small, diced
  • Frozen Peas1/2 cup

Directions

  1. Step 1

    Start by preparing your ingredients. Chop the kimchi into small pieces to ensure it mixes well with the rice. Dice the carrots and slice the green onions, keeping the green and white parts separate for later use. Mince the garlic cloves to release their flavors. Prepare the cooked rice, ideally using day-old rice as it is less sticky and fries better.

  2. Step 2

    Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once the oil is hot, add the minced garlic and sauté for about 30 seconds until fragrant, but be careful not to burn it. Next, add the diced carrots and cook for about 2-3 minutes until they start to soften. This will add color and sweetness to your dish.

  3. Step 3

    Add the chopped kimchi to the skillet and stir-fry it with the carrots and garlic for about 3-5 minutes. This will enhance the flavors and help the kimchi release its juices, which will add a depth of flavor to the rice. If you like it spicy, you can add some gochugaru (Korean red pepper flakes) at this stage.

  4. Step 4

    Once the kimchi is well-cooked, add the cooked rice to the skillet. Break up any clumps and mix everything thoroughly. Drizzle the soy sauce and sesame oil over the rice and continue to stir-fry for about 5 minutes. Make sure the rice is heated through and well-coated with the sauces.

  5. Step 5

    Create a space in the middle of the skillet and crack the eggs into it. Scramble the eggs lightly and then mix them into the rice. This will add a nice richness to the fried rice. Finally, add the green parts of the green onions and frozen peas. Stir everything together for an additional minute to combine the flavors and heat the peas. Serve hot and enjoy your delicious kimchi fried rice!
