Ingredients

  • Whole young chicken1 (about 1.2 kg)
  • Glutinous rice1 cup
  • Garlic10 cloves
  • Ginseng2 roots
  • Water8 cups
  • Saltto taste
  • Green onion2 stalks
  • Sesame seedsfor garnish

Directions

  1. Step 1

Begin by rinsing the glutinous rice under cold water until the water runs clear. Soak the rice in water for at least 1 hour to allow it to absorb moisture. After soaking, drain the rice and set it aside. This step is crucial as it ensures the rice will cook evenly and become fluffy when stuffed inside the chicken.

  2. Step 2

Next, prepare the whole chicken by cleaning it thoroughly. Remove any remaining feathers or innards, and pat the chicken dry with paper towels. This process helps to ensure that the chicken will cook evenly and that the broth will be clear. Season the inside of the chicken with a little salt for added flavor.

  3. Step 3

Stuff the chicken with the soaked glutinous rice, garlic cloves, and ginseng roots. Make sure to pack the ingredients in tightly but avoid overstuffing. This mixture will infuse the chicken with flavor and create a rich and aromatic broth as it cooks. Once stuffed, use kitchen twine to tie the legs together and secure the opening.

  4. Step 4

In a large pot, add the stuffed chicken and pour in the water. Bring the pot to a boil over medium-high heat, then reduce the heat to low to allow it to simmer gently. Cover the pot and let it cook for about 1.5 hours, or until the chicken is tender and fully cooked. During this time, check occasionally and skim off any impurities that float to the surface for a clearer broth.

  5. Step 5

Once the chicken is cooked, carefully remove it from the pot and place it on a serving dish. Strain the broth to remove any solids, then return the clear broth to the pot. Season the broth with salt to taste, and add sliced green onions for freshness. Serve the chicken hot, accompanied by a bowl of the flavorful broth and garnished with sesame seeds for an added touch.
